Recipe

This is a family favorite in our house:



Mexican Lasagna
425 ° 40-45 min.
What you need :
lasagna pan
1 lb. hamburger brown and drain
1 packet taco seasoning
1 can refried beans
1 pkg. burrito tortillas
1 lb. cottage cheese
1 lb. Monterrey cheddar shredded cheese
1 pkg. lipton taco rice prepared by directions on box
1 cup crushed tortilla chips
½ cup salsa
Prepare taco meat per package of seasoning. Prepare rice per direction on package. Mix ½ cup of salsa in meat if desired.
In large baking pan add crushed chips on bottom. Lay 2 tortillas at bottom of pan . Spread ½ can refried beans on tortillas ½ lb cottage cheese spread on top of beans on tortillas top with shredded cheese. Lay 2 tortillas ½ beef mixture ½ rice shredded cheese layer w/ tortillas & remaining beans ,cottage cheese & cheese layer tortillas and remaining meat and rice. Top with tortillas add cheese to the top. Cover with aluminum foil .
Bake for 40-45 minutes. Serves 4-6 people.

It is up to you if you want more meat go ahead and add it. You may have extra ingrediants if you choose not to use as much. We have also made it without the beans but it is just not the same. Enjoy.

Treasure Hunting

Yesterday my girlfriend and I went what we call treasure hunting. To most people it is just going to garage sales.
So, you might say what kind of treasures did you get. Oh, let me tell you I found a Kenneth Cole purse for $.25. Wow, And jeans for Brittany American Eagles, Abercrombie, Vanity, For $3.00 a pair. All were like new. Then I found for myself Limited Jeans, Harley Davidson Tank top, Party Light tea light holder that I wanted but was not willing to pay $30.00 instead I payed $5.00 for 2.
And last but not least a Para spa( hand and foot wax kit) brand new never used $5.00 with extra wax and liners.

Food Revue

Excitement that's all I can say. I don't know who is more excited me or Brittany. On Saturday Brittany is preparing a dish for a 4-H event that if she does well she could go to the State Fair.

We have been working on this for a while getting prepared and all. Tomorrow is the big day.

She is preparing Mexican Lasagna. A dish that is loved by all that have eaten it. Yet at the beginning she was all over my cookbooks trying to find something to make and boy, was she thinking big. Her first idea was Lamb something I have never made nor I would eat. After telling her we need to think about things that we might eat or make here at home. She then asked me mom can I make your Mexican Lasagna. I was so excited. Since I love to cook she is beginning to like the same. So Saturday morning she will be getting up early to prepare her dish so we have a hot sample for the Food Revue. I will let you know how she does after. A Typical Day

My day usually begins at 3:45am that would be when the alarm clock is telling me its time to go to work. By 4:00am I walk in to Michael's room and wake him up. By 4:15am we are all dressed and out the door. By 4:20am we are at our daycare to drop Michael off. After blowing him a dozen kisses and telling him I love him it is off to the cities.
As we drive in I sit and wonder why am I doing this again. Then reality kicks in and I realize that my children are the reason I get up everyday and go to work.

My work days consist of a lot of thinking, thing I need to do after work, things I want to get done for the week and other places I can apply for a job to be closer to home. Oh, yes my kids. The things they do that make me laugh or things they say. That way I have a smile on my face.

As I watch the hours(10) go by I can not wait for the day to end so I can get home. Veggie out with my kids and begin the day again.


Also, as an end note because I feel we never here the words enough "THANK YOU"

Newest Addition






Well, I am excited to let everyone know about the latest addition to the Rogstad family...... no I am not pregnant, and I did not get a new pet....so not to keep every one in suspense I got a new car.....OK its not brand new and it needs some TLC but hey that is what Jim is for. So, let me introduce you to my car:


I know it does not look neat to everyone but it is cool. When it's all done I will update the pictures. Just thought I would share with everyone.

TGIF

Sometimes Fridays just do not seem to come fast enough for me. And usually I like to say TGIT(which is Thursday) due to I work 10 hour day. But Friday is here and I get to be home with the family. I tried my hand at selling on ebay for the first time this last week and a well things did not go my way. But that does not mean I will not try again . I will update as through the weekend

A day of fun

Today my family and I went on a small road trip to my nephew's 1st bithday party. What a fun event to be at. We ate cake while he wore it. The joys of being 1. I remember my children at that age.




So when we go to my sisters we like to go to Cabelas. for us it is kind of like going to the zoo pictures in front of the mounts and we like to check out the aquarium also. While you are there you can go up to the cafe and get yourself a Elk burger.

After this stop we decided to check out Ellingson Car Museum. That was neat. The kids really enjoyed it seeing all the old cars. They even had the General Lee from the Dukes of Hazards. So, of course I took their picture in from of it.
For those who don't know me or my family we enjoy the outdoors and cars we like to take the kids to car shows demo derbies and all sorts of events. I hope you enjoyed see our day.

Why???

Why am I writing a blog for all mankind to read and judge me by. I don't know. Why does any one write one to let people know who they are or what they want people to perceive them to be. So here I am becoming a "BLOGGER".




OK, here goes I am a mother of 2 beautiful children. One is 11, Brittany: beautiful isn't she. She wants BLACK HAIR. OK breath it is only a phase and she will get over it. But then I think will she. I am a firm believer in let them be who they want so when she told me she wanted to go Gothic I had to stop and take a deep breath. I told her she had to write me a report on why she wanted to go Goth and because her friend were was not the answer. Plus I wanted notes from her friends telling me if she were to decide not go this way that they would still be her friend. Plus to top it all off we then informed her that Goth clothing was expensive and she would have to purchase them for herself. How am I doing so far. Am I just babbling or is this making any sense. So this week we purchased a colored hair spray that washes out and tried the black. "hahaha" It ran everywhere she wanted it in the night before the next day her ears were black she had streaks all over. But she now asked "mom, can I get a wash out that won't do that" I have yet to answer.



#2 Michael : He is 5 and boy he is cute. He wants to do anything that involves cars. He starts school next fall "my baby is growing up". I can not wait to see what kind of adventures he is going to take me on.
Both my children have strong personalities. Brittany is the outgoing type where Michael is the one who first checks the situation out and then decides if it is worth getting in to. But you put them together look out world the kids are going to take control. And I get the front row seat to the whole thing.
